Custom DATA file and my plottings

Hi
I'd want to plot my custom data (datas written by me) but it is not obvious how to do it in the instructions
I have written the title (PROVA GRAFICA PUGLIESE) and written latitude, longitude, filed and asterisk for my example.
Now my file is rename custom.dat
My question is: how can I say to the Digital that it is temperature (for example) field?

PROVA GRAFICA PUGLIESE
DATO UNO 41.132 17.132 31 *
DATO DUE 40.702 16.742 29 *
DATO TRE 40.102 16.232 28 *
DATO QUATTRO 39.709 15.898 27 *
