I may be doing something wrong here, but I can't get the isentropic analysis to work at all.

It seems to be working fine, as far as I can tell. I downloaded the 12Z upper air data from this morning and produced plots of Theta and wind barbs on various isentropic surfaces. Perhaps you aren't setting the tabular settings correctly? You not only select Isentropic Analysis but also have to select an isentropic surface (like 315K).
